Building awareness and access to tackle food insecurity in universities.

Education, Resources and Awareness on Food Insecurity in Universities

Project Description

Event Recap: Your Campus, Your Community — Student Resource Roundtable On Friday, August 21, Impact Project USA | Africa hosted "Your Campus, Your Community," a Student Resource Roundtable for International Students at the Center for Global Engagement Lobby, Paul L. Foster Center, Baylor University. The roundtable brought together students, faculty, and community partners to explore resources available to reduce food insecurity and financial hardship on campus. We had the opportunity to spend time with students and partners, exchange perspectives, and continue building relationships around work that truly supports students. Four distinguished speakers brought a unique and vital perspective to the conversation: Leigh Greathouse, PhD, MPH, RD — Associate Professor of Nutrition Sciences and Biology, Baylor University — shared insights on how eating nutritious foods can help reduce cancer risk and support long-term student health. Tre Baldwin, MSW — Assistant Director of Basic Needs — walked attendees through how to access the food pantry and campus resources available at Baylor, making essential services more visible and reachable for all students. Grace Norman — Chief of Staff and Sr. Director, Public Affairs and Strategic Partnerships — highlighted opportunities to maximize Baylor's collaborative campus resources, connecting students with the support networks available to them. Kathryn Janda-Thomte, PhD, MPH — Assistant Professor in Public Health — guided students on navigating campus lifestyle choices and maintaining healthy eating habits within university life. Grateful for every conversation, and for everyone who made the day meaningful. The results of the roundtable are still coming in, and we look forward to sharing the full impact of these discussions in the weeks ahead.
